There’s so many diets out there, I can’t keep track anymore! Who’s to know what’s the right way to eat?

 

No grains? Low carb? No meat? Mainly meat? 

 

However, the one thing all diets seem to have in common is that greens, salads and natural produce are good. 

 

They’re nutrient dense, they fill you up will relatively little calories, and they keep your body’s intestines functioning properly.

 

So to help, I’ve assembled a few recipes that claim to make veggies not taste like veggies.  I have tried these recipes and they look good and taste delicious!

 

Carrot Fries

 

These things look pretty good! It’s seriously just carrots with olive oil, salt, and pepper. And they’re baked instead of fried.

 

 

Mashed Cauliflowers 

 

Instead of mashed potatoes, have mashed cauliflower. The texture, color, and (hopefully) taste of mashed cauliflower is pretty close to mashed potatoes.

Recipe: Lebanese Spiced French Fries

 

Ingredients

 

1 recipe Crispy Skinny French Fries
4 tablespoons fresh cilantro, chipped
1 large red Fresno chili, thinly sliced
1/4 of a fresh lime
1 tablespoon za’atar
1 teaspoon kosher salt
¼ teaspoon cayenne pepper

Instructions

 

Make the Crispy Skinny French Fries according to the recipe.
When you pull the fries from the hot oil, briefly drain them and then add them to a stainless steel bowl in batches. Toss them, in the bowl with a generous sprinkle of the za’atar and salt mixture.

 

Repeat until all of the fries are cooked and seasoned.

 

Toss them with the cilantro and chili and lightly squeeze the lime juice over the top of the fries.

 

Accompany these delicious french fries with a:

For the Ketchup:

 

¼ cup ketchup
¼-½ teaspoon cloves to taste
Stir together the ketchup and cloves until well combined.

Start with ¼ teaspoon and increase to ½ teaspoon if a stronger flavor is desired.

Serve the ketchup with the fries.
Preparation time: 30 minute(s)

Cooking time: 20 minute(s)

SALMON RECIPE:

Clean Eating Baked Thai Salmon

 

Ingredients

 

6 x 6 oz sockeye salmon fillets, skin on or off
Pinch of salt
1/2 cup + 2 tbsp Thai sweet chili sauce, divided
2 – 3 tbsp green onions, chopped
Cooking spray (I use Misto)

Directions for salmon recipe

 

In a large baking dish, lay down salmon fillets in a row. Each fillet – sprinkle with a pinch of salt and top with 1 tbsp Thai sweet chili sauce. Brush or rub with your fingers to coat fish with sauce evenly on top, bottom and sides. Cover and let marinate in the fridge for at least 2 hours or overnight is the best (up to 24 hours).

 

Turn on oven’s broiler on High and position top oven rack 5″ – 6″ below the heat source. Line large baking sheet with unbleached parchment paper, spray with cooking spray and place salmon fillets skin side down (if any). Coat with remaining marinade from the dish (if any).

Broil for 8 minutes, rotating baking sheet once. Remove from the oven and brush top of each fillet with 2 tsp of Thai sweet chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized. Serve hot garnished with green onions, extra sauce (if desired) with brown rice or quinoa on a side.

Storage Instructions: Refrigerate covered for up to 3 days.

Where do you supposed extra long French fries will fall among the many different classifications of fries for you?

You’re probably wondering where on earth I find finds such massive potatoes to make these crispy creations, other than in Japan or Australia.

The answer is nowhere, they don’t exist. Instead, potatoes are mashed into a sort of batter-like consistency.

Then, the potato mixture is gathered into balls, and they’re placed, one by one, into a special machine that presses out long sticks of potato directly into a deep fryer. It kind of looks like pasta in the making.

It is quickly marinated in the bright flavors of lemon zest and lemon juice, savory garlic and spicy red chile pepper flakes. After being skewered and quickly cooked on a hot grill, they’re slathered in a compound butter which mirrors the flavors in the marinade. It’s true what they say – big things do come in small packages!

 

 

If you want a little extra of that buttery sauce to serve with some couscous or pasta, just double up on the butter and lemon. Add some fresh steamed asparagus, and you will have a complete meal in no time that the whole family will love!

 

This lemon garlic shrimp recipe is definitely one of the easiest and quickest made from-scratch dinners you could make. Trust me, the flavor definitely beats a package of plain old ramen or fast food, so go with this instead when you have the urge to just grab something quick.

 

 

Ingredients:

 

16 jumbo shrimp, peeled and deveined
2 tablespoons extra virgin olive oil
1 teaspoon lemon zest
Juice of one lemon
2 garlic cloves, minced
1/8 teaspoon red chile pepper flakes
1/8 teaspoon salt

1/2 cup butter, softened
1 tablespoon chopped fresh parsley
2 teaspoons lemon juice
1 garlic clove, minced
1/8 teaspoon red chile pepper flakes

 

 

Directions:

Combine shrimp, oil, lemon zest, lemon juice, minced garlic, red chile pepper flakes and salt in a large bowl. Cover and marinate in the fridge for 30 minutes.
Meanwhile, combine ingredients for lemon- garlic butter with a fork in a small bowl and set aside.
Preheat grill over medium-high heat. Place four shrimp on a skewer, then grill skewers for 2-3 minutes a side, or until shrimp are plump and pink. Remove to a platter, then slather with lemon garlic butter while hot. Serve immediately.

SCRUMPTIOUS CHEESECAKE RECIPE!

INGREDIENTS 

CRUST

1 1/2 cups crushed creme-filled chocolate sandwich cookies (15 cookies)

2 tablespoons margarine or butter, softened 

FILLING

3 (8-oz.) pkg. cream cheese, softened

1 cup sugar

3 eggs

1 cup whipping cream

2 tablespoons margarine or butter, melted

2 teaspoons vanilla

1 cup coarsely chopped creme-filled chocolate sandwich cookies (about 10 cookies)

 

 

 

TOPPING

Whipped cream

Crushed creme-filled chocolate sandwich cookies

METHOD

1. Heat oven to 325°F. In medium bowl, combine crust ingredients; mix well. Press in bottom and up sides of ungreased 10-inch springform pan. Refrigerate.

 

 

2. In large bowl, beat cream cheese at medium speed until smooth and creamy. Gradually add sugar, beating until smooth. At low speed, add eggs 1 at a time, beating just until blended. Add whipping cream, 2 tablespoons margarine and vanilla; beat until smooth. Stir in 1 cup chopped cookies. Pour into crust-lined pan.

 

3. Bake at 325°F. for 50 to 60 minutes or until edges are set; center of cheesecake will be soft. Turn oven off; open oven door at least 4 inches. Let cheesecake sit in oven for 30 minutes or until center is set.
 

 

 

4. Remove cheesecake from oven. Cool in pan on wire rack for 1 hour or until completely cooled. Carefully remove sides of pan. Refrigerate 8 hours.

5. Just before serving, top cheesecake with whipped cream; sprinkle with crushed cookies. Store in refrigerator.

There are a variety of recipes involving different ingredients. All of them I’m sure are delicious. No matter what kind of meat and spices you use, this one has to have two things in common: moist and flavorful.

Ingredients

1 pound ground beef chuck

1 1/4 teaspoons salt 

1/4 teaspoon ground black pepper

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1 egg beaten

8 ounce can diced tomatoes with the juice

1/2 cup quick cooking oats

 

Brown Sugar Glaze:

 

1/3 cup ketchup

3 tablespoons brown sugar

1 tablespoon yellow mustard

 

 

Instructions

 

Preheat your oven to 375 degrees.

Mix the ground beef, salt, pepper, onion, green peppers, egg, oats and diced tomatoes well.

You may have to use your hands, but don’t overwork the meat. Just until the ingredients are mixed in.

Form a loaf and place in a baking dish.

Mix ketchup, brown sugar and mustard together and spread over the meat.

 

 

Bake uncovered 1 hour, draining grease away twice by tipping the dish and using a spoon or holding the meat with a spatula and draining straight from the dish.

FIESTA CORN DEL MONTE

Del Monte Foods Inc. is recalling more than 64,000 cases of canned corn because the corn did not go through the entire sterilization process and could cause life-threatening illness if eaten.

The Walnut Creek, California, company recalled 64,242 cases of Fiesta Corn Seasoned with Red Green Peppers due to under-processing, the company told the FDA on Wednesday. The lack of sterilization process could result in contamination by spoilage organisms or pathogens, Del Monte said.
That in turn could lead to life-threatening illness if consumed, the company says. As of now there have been no reports of illness associated with the products.
