Easy to eat a bunch at a time, just peel away the thin outer layer to get to the good stuff inside.

You could also buy a few to keep around the house as decorations because they are one of the most exotic looking things in this world.

If want to lose weight, boost your energy, , rambutan may be the fruit you’ve been missing.

Rambutans are often confused for the better known lychee fruit because they both have red exterior shells and white, milky insides that are oval in shape. Rambutan fruit are native to Malaysia and Indonesia.

Called “NgoR” in Thai, this golf-sized, tiny red fruit is covered with “Velcro” hairs and when cracked open by squeezing it between your palms, reveals a seed covered with white and translucent texture.

You eat the fruit by chewing off the white texture of the seed, giving you a sweet and cool flavor with a mildly acidic taste. The best rambutans in Thailand come from the Surat Thani province where they were first planted in 1926.

Make delicious popsicles with my mangoes and yogurt——>Freeze them!

Oatmeal is one of my favorite choices of food to eat in the morning. Oatmeal contains vitamins, minerals and antioxidants that make me feel so much better through out the day. It also contains carbohydrates, proteins and soluble fiber which helps me not to feel bloated. Soluble fiber also reduces the levels of LDL or «bad» cholesterol by blocking its absorption into the bloodstream.

If you want to enjoy your oatmeal in the morning you can add some banana, apple, no sugar, water and maybe a bit of low-fat milk, lots of cinnamon one day and the next I add vanilla, one day blue berries next day strawberries. I personally do not like to add pecans but some people can’t eat oatmeal without adding pecans. It’s your choice.

I prefer steel-cut oatmeal. Others prefer the rolled or irish oats. Whatever the kind if you like them, enjoy them!

It’s June! summer has arrived and it’s almost time for many of us to harvest our first squash, beans and tomatoes!

I have worked very diligently on my compost for the last 12 months to make sure that it would be perfect for my vegetable garden project this summer.
Now I have pumpkins, tomatoes, squash, peaches, berries, and nore, swiss chard and more veggies and fruits growing divinely and profusely.

A SUNDAY TO RELAX AND ENJOY LIFE!

Beautiful Sunday Morning

This Sunday is just gorgeous. My vegetables plants, bulbs, limes, lemons orange and mandarin trees are full with fruit and rain drops on their leaves.

It is winter but my tomatoes are enchanting! Something I notice this season is that they are bigger and sweeter. I wonder. Maybe it’s because I used my own compost last year, since april I started creating my own compost and started using it in the fall with my tomatoes and citrus.

 

The branches are so heavy they are bending down, that’s why I had to get some bamboo pieces to straighten them up. It was so much fun to do it. The smell of the wet dirt with the one coming from the wet oranges and limes, it’s  just to die for!

 

When I am not out cycling on the weekend, I love to take care of my plants. I have so many and in Winter I have as much work to do in the yard as in Spring and Summer, because I have to plant carrots, onion, garlic, etc., and I need to start preparing the dirt and seeds for the coming planting season and for Spring.

Nature is amazing, isn’t it?

I have always loved nature. Call it forest, oceans, animals, humans, lakes, air, sun, stars and anything beyond earth; micro and macro-systems, ecosystems. Breathing life, constantly, living the moment fully, integrating my thoughts with nature to feel myself alive, and not alone.
